Chile is harvested, flame-roasted, peeled, diced, packed, and flash-frozen in a USDA approved facility, all within 24 hours. Autumn Roast Green Chile is HOT and will have black flecks from roasting. XX-HOT is our hottest variety. HOT is a standard hot green chile. Mild is a standard mild green chile. Christmas Roast is HOT and is a mix of red and green chile.
