  1. Soak 200g of soybeans overnight in plenty of water, drain, and blend the soybeans with 2 liters of water.
  2. Bring the soy water to a boil, then reduce the heat to low and simmer for 10 minutes. For store-bought soy milk, heat 2 liters to near boiling and then turn off the heat.
  3. Dissolve 1-2 teaspoons of natural calcium sulfate in one cup of warm water. Slowly pour the solution into the slightly cooled soymilk (about 80°C), stirring gently. Allow the mixture to stand for 15 minutes.
  4. Once the soymilk separates into small white curds and an amber liquid, transfer the curds into a mold lined with cheesecloth. Place a heavy weight on the lid and let it sit for about 2 hours. Finally, empty the tofu block and store it in a sealed container with sufficient water.
