The Gluten Free Tagliatelle are good with any sauces, we suggest Bolognese, mushroom or tomato. The dough, composed by corn (70%) and rice (30%) is mixed in a special box and at room temperature and once it has reached the desired cut, the products are brought into the driers. Drying also takes place at room temperature for a very long time, approximately 48 hours. The production of our pasta, from dough to packaging is meticulously followed by our women who for years, step by step and manually, take care of every detail to give our products that extra feature: an artisanal production made almost entirely by hand. Limpasto, composto da farina di mais (70%) e riso (30%), viene miscelato in unapposita impastatrice e temperatura ambiente e, una volta che ha raggiunto le caratteristiche necessarie, viene passato in unaltra macchina chiamata gramolatrice che pressa limpasto fino al raggiungimento della giusta consistenza. Una volta formato il taglio desiderato, il prodotti viene portato negli essiccatoi. Lessiccazione, avviene anch'essa a temperatura ambiente per tempi molto lunghi circa 48 ore. La produzione della nostra pasta, dall'impasto al confezionamento, quindi viene seguita meticolosamente dalle nostre donne che da anni, passo dopo passo e manualmente, si prendono cura di ogni dettaglio per dare ai nostri prodotti quella caratteristica in pi: una lavorazione artigianale fatta quasi interamente a mano. La pasta inoltre, essendo un laminato lavorato a temperatura ambiente, durante il suo ciclo di lavorazione non subisce variazioni termiche: questo ci permette di non alterare le qualit organolettiche delle materie prime.
