Hand Picked and Unfiltered This cold-pressed unfiltered extra virgin olive oil originates from the west and central regions of Sicily, namely: Partanna, Castelvetrano, Giuliana, Chiusa Sclafani, Valderice, Buseto, and Castelluzzo. We use three varieties of olives (Biancolilla, Nocellara del Belice, Cerasuola) from the sunny hillsides of Sicily, and harvest them by hand from October to December. Within 24 hours after harvesting the olives are milled using a continuous extraction and separation by centrifuge process. The oil is then allowed to settle naturally and decanted, giving each bottle a 24-month shelf life.
