Our organic einkorn wheat berries are grown and packaged on one secluded and pristine farm in Tuscany. Wheat berries are the whole grain or seed that are later milled to flour. Einkorn is the first and most ancient variety of wheat, grows inside an outer husk. At the farm, we carefully clean the husk but do not polish or pearl the grain, so you are eating 100% of the bran and germ. Wheat berries can be cooked like brown rice in just a half an hour, prepared like risotto, eaten in soups, cold in salads or cracked in a blender and eaten like porridge oats. For the absolute freshest 100% whole einkorn flour, you can use a grain mill to grind the berries as needed. With 9g of protein, 4g of fiber and an abundance of B vitamins per serving, you will really feel sustained and energized by a wholesome meal of ancient einkorn. Einkorn wheat berries should be stored properly to ensure freshness. The most prudent step to proper storage is estimating and storing only what you will be using over a 1-2 month period of time and not opening more than that amount. Therefore, if you bake infrequently, it is not a good idea to buy a bulk amount. Its best to buy smaller amounts more frequently and then always work with the freshest ingredients. Here is how you can store your wheat berries for maximum freshness: If einkorn wheat berries are packaged in an airtight bag, they will stay fresh until the expiration date on the package. Once opened, wheat berries can be stored at room temperature in an airtight container away from direct sunlight or sources of heat for 60 days. For longer storage or if the temperatures in your kitchen are frequently above 75F, refrigeration in an airtight container is recommended.
