Under the care of Juan David Gallego, this Parainema—rooted in the Villa Sarchi × Timor Hybrid lineage—shows how a washed process can reveal the variety’s crystalline, citrus‑driven character.
Harvested in May/June 2026 and roasted to a light, expressive profile, the cup opens with a luminous fragrance: bright citrus peel, gentle florals, and a hint of fresh star fruit. The washed process sharpens the structure, allowing each note to land with precision.
On the palate, the experience is vibrant yet composed. Pomelo brings a rounded, juicy brightness; lemon zest adds a clean, sparkling edge; and star fruit contributes a delicate tropical lift.
