Pepper is best if ground directly onto food. With hot dishes it is best to add pepper towards the end of the cooking process to preserve its aroma. At one time a very rare and highly valued spice, it was traded at the value of gold.
The quality of these peppercorns is nice, but honestly, 25 lbs is a lot. I wish they offered a smaller size for home cooks like me. The packaging was a bit bulky, making it hard to store. Still, the taste is excellent, so I'm not completely dissatisfied.
