Kali Jeera rice, also known as Baby Basmati or Kalo Jeera, is a small-grained, aromatic rice variety primarily cultivated in the eastern regions of India, particularly West Bengal. Despite its short size, it has a distinctive fragrance and taste similar to basmati rice but with a more delicate texture. It is prized for special occasions and traditional dishes such as pulao, fried rice, and sweet preparations like payesh (rice pudding).
