The processing is carried out without heating the olive paste and without the addition of hot water to the paste itself and to the oily must, to give this Ligurian olive oil a superior taste and aroma that you will enjoy in your meals. This olive oil is quite delicate, typical of the Taggiasca Cultivar. Ogliarola Taggiasca Olive Oil is excellent with every dish, particularly fish and salads. Frantoio Roi Roi is a small family-owned EVOO producer that has been operating for four generations. The olive grove and the flavor of the olives are influenced by the surrounding Mediterranean woodland and chestnut trees, the sea, and wild herbs. The olive mill is composed of the traditional mill with a granite millstone and two presses, as well as a newly designed mill with a continuous cycle and cold extraction.
