White spelt flour is made from spelt, an ancient grain that is related to modern wheat. It has a slightly nutty flavor and a lighter texture compared to whole wheat flour. White spelt flour is often used as a substitute for all-purpose flour as it has a similar texture and gluten content. However, white spelt flour has a slightly lower gluten content than all-purpose flour, which may affect the texture of certain baked goods such as bread. For the best results, remember to use either more flour or less liquid when substituting spelt flour in a wheat flour recipe.
Additionally, white spelt flour may be easier to digest for some people who have trouble with wheat products, as it contains different types of gluten proteins.
